Pulla - Finnish Coffee Cake 1 envelope of dry yeast 1 Cup of Scalded Milk - This can be done in the microwave oven 1 Tsp sugar 2 Eggs 1 Tsp salt 1/2 Cup sugar 1 Stick of melted butter 1 1/2 Tsps of ground cardemom 4 to 4 1/2 cups of bread flour 1 beaten egg 1/2 cup chopped or slivered almonds Method Put the teaspoon of sugar in the milk after it has boiled and is off the heat. Allow to cool to the touch and add the yeast. Beat two eggs and add them plus a teaspoon of salt, the melted butter, 1/2 cup of sugar and cardemom. Now stir in the flour until you have a loose workable dough. Knead the dough and set aside to rise - This can be done overnight. Take the dough, punch it down and split in two halves. With each half, cut into three pieces, roll into ropes and braid as one loaf. You should now have two loaves. Let rise until doubled (about one hour) on a baking sheet. When risen, coat with the beaten egg and sprinkle with almonds. Place in a 400 oF oven for about thirty minutes.
